Priprema


1. Potopite piletinu, list lovora, biber u zrnu, so, peršun i estragon u vodu i kuhajte 30 minuta. Zatim uklonite kožu sa mesa, meso skinite sa kostiju i isjecite ga na kocke. Tečnost u kojoj je meso kuhano procijedite i sklonite sa strane.

2. Dinstajte sjeckanu ljutiku na puteru, pospite brašnom i dodajte tečnost (koju ste odvojili), pavlaku i vino. Sačekajte da proključa, dodajte sol i biber.

3. Sos sklonite sa strane, umutite 4 žumanca, sir i dodajte piletinu. Umutite bjelanca u snijeg i sjedinite sa sosom. Cijelu smjesu sipajte u posudu za pečenje obloženu papirom za pečenje i pecite na 180 °C oko 30 minuta.
